Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt pan generously to ensure easy removal of the cake later.
In a medium saucepan, boil the apple cider over medium heat until it reduces to about 1 cup, approximately 10-15 minutes. Let it cool slightly.
In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until smooth and fully combined.
Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
Pour the cooled reduced apple cider into the sugar and egg mixture. Mix well until blended.
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
Fold in the diced apples, distributing them evenly throughout the batter.
Pour the batter into the prepared bundt pan and smooth out the top with a spatula.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 15 minutes, then carefully invert it onto a wire rack to cool completely.
While the cake cools, mix the ¼ cup of granulated sugar with 1 teaspoon of cinnamon in a small bowl.
Once the cake has cooled, sprinkle the cinnamon sugar mixture evenly over the top for a sweet finish.

Serve slices on a rustic wooden board or a decorative cake stand, dusted with powdered sugar and accompanied by thin apple slices.
