Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg. Set aside.
In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet mixture, alternating with the apple cider. Mix until just combined; do not overmix.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
In a small bowl, combine the powdered sugar and apple cider to create the glaze. Adjust the consistency by adding more cider or sugar as necessary.
Once the cake is completely cooled, drizzle the apple cider glaze over the top, allowing it to drip down the sides.
Notes
Serve slices on a rustic wooden board, garnished with thin apple slices and a sprinkle of cinnamon.
