Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
Press the mixture into the bottom of a parchment-lined 9x9 inch baking dish. Bake for 10 minutes and remove from the oven.
In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy using an electric mixer.
Add the vanilla extract and eggs, mixing until just combined. Do not overmix.
Pour the cheesecake mixture over the baked crust and spread evenly.
In a separate bowl, toss the diced apples with brown sugar, cinnamon, lemon juice, and cornstarch until well coated.
Distribute the apple mixture evenly over the cheesecake layer.
In another bowl, combine rolled oats, flour, brown sugar, softened butter, and a pinch of salt. Mix until crumbly and sprinkle over the apples.
Bake the assembled bars in the oven for an additional 30-35 minutes, or until the edges are set and slightly golden. The center may jiggle slightly.
Remove from the oven and let cool at room temperature before refrigerating for at least two hours.
Once chilled, lift the bars out by the parchment paper and slice into squares.
Notes
Serve with powdered sugar and vanilla ice cream for an extra touch.
