0.5cupcinnamon sugar (¼ cup granulated sugar + 1 tablespoon ground cinnamon for topping)
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract until well combined.
Gradually add the dry flour mixture to the butter mixture alternately with the buttermilk, starting and ending with the dry ingredients. Mix until just combined (do not overmix).
Scoop the batter into the prepared muffin tin, filling each cup about ⅔ full.
In a small bowl, mix together the cinnamon and sugar for the topping. Sprinkle a generous amount of the cinnamon sugar mixture over each muffin.
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Serve the muffins warm or at room temperature, and sprinkle additional cinnamon sugar on top for extra sweetness.
