Instructions
Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
In a large bowl, combine the shrimp, sliced bell peppers, and red onion.
Drizzle the olive oil over the mixture and sprinkle the Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Toss everything together until evenly coated.
Spread the shrimp and vegetable mixture evenly on the prepared baking sheet in a single layer.
Bake in the preheated oven for about 15-20 minutes, or until the shrimp are cooked through and pink, and the veggies are tender.
While the shrimp are baking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, just until pliable.
Remove the sheet pan from the oven and let it cool for a couple of minutes. Then, serve the shrimp and veggies on the warmed tortillas.
Garnish with fresh chopped cilantro and a squeeze of lime juice before serving.
