In a large skillet over medium heat, add the ground beef (or turkey) and cook until browned. Drain the excess fat.
Add the diced onion and minced garlic to the skillet, cooking until the onion becomes translucent.
Stir in the black beans, corn, diced tomatoes with green chilies, taco seasoning, salt, and pepper. Allow the mixture to simmer for about 5 minutes to combine the flavors.
In a large mixing bowl, crush half of the Doritos and layer them at the bottom of a greased 9x13-inch baking dish.
Spread half of the beef and bean mixture over the crushed Doritos. Top with half of the sour cream and half of the shredded cheddar cheese.
Repeat the layers, starting with the remaining Doritos, followed by the rest of the beef mixture, sour cream, and cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
Remove from the oven and let it cool slightly before serving.
Garnish with fresh cilantro on top before slicing into servings.
