Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.
In a large mixing bowl, combine the mashed bananas with the melted coconut oil, mixing well to incorporate.
Add the brown sugar to the banana mixture and stir until combined.
Beat in the egg and vanilla extract until fully mixed.
Sprinkle the baking soda and salt over the mixture and stir until just combined.
Gradually add the flour and mix until there are no dry spots; be careful not to over-mix.
Fold in the chocolate chips and chopped walnuts if using, ensuring they are evenly distributed.
Pour the batter into the prepared loaf pan, smoothing the top. Sprinkle additional chocolate chips on top for a decorative touch.
Bake in the preheated oven for 55-60 minutes or until a toothpick inserted into the center comes out clean.
Remove from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Slice the banana bread and arrange on a serving platter. Serve warm with a pat of butter on top or enjoy with a scoop of ice cream for a decadent dessert.
