In the slow cooker, combine the steel cut oats, water (or almond milk), diced apples, ground cinnamon, nutmeg, maple syrup (or honey), walnuts or pecans, and salt. Stir to combine all ingredients thoroughly.
Cover the slow cooker with the lid and set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours, depending on your time availability.
Once cooked, stir the oats to ensure an even texture. If you prefer a creamier consistency, add a splash more water or almond milk and mix well.
