1 lb (-450g) beef sirloin or tenderloin, thinly sliced

2 tablespoons olive oil

1 medium onion, thinly sliced

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (cremini or button)

1 tablespoon Worcestershire sauce

1 teaspoon paprika

1 cup beef broth

1 cup sour cream

2 tablespoons all-purpose flour

Salt and pepper to taste

Fresh parsley for garnish

8 oz (225g) egg noodles

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef in batches, searing it until browned on all sides, about 2-3 minutes per batch. Remove the beef from the skillet and set aside.

      Sauté Onions and Mushrooms: In the same skillet, add the sliced onions and mushrooms. Sauté until the onions become translucent and the mushrooms are browned, approximately 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

        Create the Sauce: Sprinkle the flour over the onion and mushroom mixture, stirring to coat. Cook for about 1 minute, then add the beef broth gradually while stirring to avoid lumps. Add the Worcestershire sauce, paprika, and season with salt and pepper.

          Combine Everything: Return the seared beef to the skillet, reduce the heat to low, and add the sour cream. Stir well to combine everything, cooking gently for about 5 minutes until heated through. Adjust seasoning if necessary.

            Serve: Serve the beef stroganoff over the cooked egg noodles.
