1 lb (450g) large shrimp, peeled and deveined

1 cup coconut milk

2 tablespoons fresh lime juice

Zest of 1 lime

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon honey

2 tablespoons fresh cilantro, chopped

1 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper, to taste

2 tablespoons vegetable oil

Cooked jasmine rice, for serving

Instructions
 

In a medium bowl, whisk together the coconut milk, lime juice, lime zest, minced garlic, grated ginger, honey, red pepper flakes, salt, and pepper. This will be your marinade.

    Add the shrimp to the marinade and stir to ensure they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).

      Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated shrimp, making sure to reserve the marinade for later use.

        Cook the shrimp for 2-3 minutes on one side until they turn pink, then flip them over.

          Pour the reserved marinade into the skillet, bringing it to a simmer. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.

            Remove from heat and stir in the chopped cilantro. Adjust seasoning with salt and pepper if needed.

              Serve the coconut lime shrimp over a bed of jasmine rice, drizzling some of the sauce over the top.
