Instructions
In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet over medium heat, add olive oil. Once hot, add the sliced sausage and cook until browned, about 5-6 minutes.
Add the chopped onion, minced garlic, and diced bell peppers to the skillet. Sauté for about 4-5 minutes until the vegetables are softened.
Pour in the chicken broth and heavy cream. Stir in the Cajun seasoning and paprika. Allow the mixture to simmer for about 3-4 minutes, stirring often until slightly thickened.
Add the cooked pasta to the skillet and toss to coat in the creamy sauce. Allow it to cook for another 2-3 minutes on low heat.
Stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
Remove from heat, and garnish with fresh parsley before serving.
