Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper on both sides.
Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it.
Reduce the heat to low, then add the chopped spinach to the skillet. Cook for 2-3 minutes until wilted.
Pour in the heavy cream, stirring well. Add the grated Parmesan cheese and Italian seasoning, and mix until the cheese is melted and the sauce is creamy.
Return the cooked chicken breasts to the skillet, spooning the sauce over them. Let it simmer for 3-4 minutes to heat through.
Taste and adjust seasoning with more salt and pepper if necessary.
Garnish with freshly chopped parsley before serving.
