Crockpot Mexican Chicken

2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup chicken broth (low sodium)

1 bell pepper (red or green), diced

1 small onion, diced

1 jalapeño, finely chopped (optional for extra heat)

1/2 cup fresh cilantro, chopped

Salt and pepper to taste

Juice of 1 lime

Instructions
 

Place the chicken breasts at the bottom of the crockpot.

    In a mixing bowl, combine the black beans, corn, diced tomatoes, taco seasoning, and chicken broth. Stir well until evenly mixed.

      Layer the diced bell pepper, onion, and jalapeño (if using) on top of the chicken.

        Pour the bean and tomato mixture over the vegetables and chicken.

          Add salt and pepper to taste, then cover the crockpot with the lid.

            Cook on low for 6-8 hours or on high for 4 hours, until the chicken is cooked through and easily shredded.

              Once the cooking time is complete, remove the chicken pieces and lightly shred them with two forks. Return the shredded chicken to the crockpot and stir to mix it with the other ingredients.

                Stir in the lime juice and chopped cilantro just before serving.
