Instructions
In a large mixing bowl, combine the shredded chicken, chopped celery, halved grapes, toasted walnuts, and diced red onion.
In a separate bowl, whisk together the Greek yogurt, Dijon mustard, honey, salt, and pepper until well blended.
Pour the yogurt mixture over the chicken mixture. Gently toss everything together with a spatula until all ingredients are evenly coated.
Taste and adjust seasoning with more salt or pepper if needed.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
Before serving, give the salad a gentle stir and garnish with fresh parsley for a pop of color.
