200g ladyfinger cookies (savoiardi)

1 cup strong brewed matcha tea, cooled

1 cup heavy whipping cream

250g mascarpone cheese

1/4 cup powdered sugar

2 teaspoons vanilla extract

Unsweetened cocoa powder for dusting

Dark chocolate shavings for garnish (optional)

Instructions
 

In a shallow dish, pour the cooled matcha tea.

    Dip each ladyfinger quickly into the matcha tea ensuring they are moist but not soggy.

      In a separate large bowl, whip the heavy cream until stiff peaks form.

        In another bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

          Gently fold the whipped cream into the mascarpone mixture until fully combined, being careful not to deflate the cream.

            In a 9x9-inch square dish, layer half of the dipped ladyfingers on the bottom.

              Spread half of the mascarpone mixture evenly over the ladyfinger layer.

                Repeat the process with another layer of dipped ladyfingers, followed by the remaining mascarpone mixture.

                  Smooth the top with a spatula and cover with plastic wrap. Refrigerate for at least 4 hours or overnight to set.

                    Before serving, dust the top with unsweetened cocoa powder and add dark chocolate shavings if desired.
