Instructions
Place the chicken breasts in the bottom of the crockpot.
In a separate bowl, mix together the black beans, corn, diced tomatoes (with their juice), red bell pepper, onion, garlic, chili powder, cumin, paprika, salt, and pepper.
Pour the mixture over the chicken breasts in the crockpot, ensuring they are well covered.
Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
Once cooked, use two forks to shred the chicken right in the crockpot. Stir in the lime juice and adjust seasoning if needed.
Serve the Fiesta Chicken warm, garnished with fresh cilantro and alongside tortilla chips or wrapped in warm tortillas.
