3 ripe bananas, peeled and cut into diagonal slices

1 cup all-purpose flour

1 tablespoon cornstarch

1 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup cold water (adjust as needed)

1/4 cup brown sugar

2 tablespoons coconut oil (or vegetable oil) for frying

Optional: Powdered sugar for dusting

Optional: Chopped nuts (e.g., walnuts or peanuts) for garnish

Optional: Vanilla ice cream for serving

Instructions
 

In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and ground cinnamon. Mix well.

    Gradually add the cold water to the dry ingredients, whisking until you achieve a smooth batter. It should be thick but pourable; adjust the water if needed.

      Heat coconut oil in a frying pan over medium heat until hot.

        Dip each banana slice in the batter, ensuring they are well-coated.

          Carefully place the coated banana slices into the hot oil and fry for about 2-3 minutes on each side until golden brown and crispy.

            Remove the fried bananas and place them on a paper towel-lined plate to drain excess oil.

              In a small saucepan over low heat, melt the brown sugar just until it starts to caramelize, stirring frequently. Be careful not to let it burn.

                Drizzle the caramelized brown sugar over the fried bananas while they are still warm.

                  Optionally, dust with powdered sugar and sprinkle chopped nuts for added crunch and flavor.
