Instructions
Start by marinating the chicken. In a bowl, mix together 2 cloves of minced garlic, olive oil, soy sauce, honey, ginger, and sesame oil. Add the chicken breasts, ensuring they are well-coated and let marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
After marination, heat a non-stick skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side or until fully cooked and golden brown. Once done, remove from heat and let it rest for a few minutes before slicing.
In the same skillet, add the remaining minced garlic and mixed vegetables. Stir-fry for about 5 minutes until the vegetables are tender yet crisp. Season with salt and pepper to taste.
To serve, place a generous scoop of jasmine rice in a bowl. Arrange the sliced chicken on top, followed by the stir-fried vegetables.
Drizzle any remaining garlic sauce from the skillet over the bowl. Garnish with chopped green onions and a sprinkle of sesame seeds.
