Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
In a medium bowl, mix together the ricotta cheese, grated Parmesan cheese, cream cheese, minced garlic, chopped spinach, Italian seasoning, salt, and pepper until well combined.
Place one chicken breast on a clean cutting board. With a sharp knife, butterfly the chicken by slicing it horizontally, but not all the way through, so it opens like a book.
Spoon a generous amount of the cheese mixture onto the chicken breast. Roll it up tightly and secure it with toothpicks if necessary. Repeat this step for all chicken breasts.
In a shallow dish, pour the breadcrumbs and season with a little salt and pepper. Roll each chicken roll-up in the breadcrumbs to coat evenly.
In a large skillet, heat the olive oil over medium-high heat. Sear each chicken roll-up for about 3-4 minutes on each side until golden brown.
Transfer the seared chicken roll-ups to the prepared baking dish. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and juices run clear.
Remove from the oven, let cool for a few minutes, and then garnish with fresh parsley before serving.
