In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
Add the minced garlic and cook for another minute until fragrant.
Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-6 minutes.
Stir in the diced sweet potatoes, spinach, cherry tomatoes, cumin, smoked paprika, chili powder, salt, and black pepper. Cook for an additional 8-10 minutes, stirring occasionally, until the sweet potatoes are tender.
Transfer the turkey-sweet potato mixture to a greased 9x13 inch baking dish.
Sprinkle the shredded mozzarella cheese evenly on top.
Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
Allow the casserole to cool for a few minutes before serving.
