Add honey (or maple syrup), eggs, and vanilla extract to the banana mixture. Mix until smooth and well incorporated.
In a separate bowl, whisk together the baking soda, salt, cinnamon, and whole wheat flour.
Gradually add the dry ingredients to the banana mixture, stirring gently until just combined (be careful not to over-mix).
If desired, fold in the rolled oats, dark chocolate chips, and chopped nuts for added texture and flavor.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Slice the banana bread and serve on a wooden board, optionally garnished with a sprinkle of cinnamon and a few banana slices on the side. Drizzle with honey if desired for an extra touch of sweetness.
