Instructions
In a large non-stick skillet, heat the olive oil over medium heat.
Add the diced bell pepper and cherry tomatoes to the skillet. Sauté for about 2-3 minutes, or until they begin to soften.
Stir in the chopped spinach and cook for an additional minute until it wilts.
In a separate bowl, whisk the egg whites with garlic powder, salt, and pepper.
Pour the egg whites into the skillet over the vegetables. Allow them to sit for a few moments without stirring, enabling them to cook slightly.
Gently stir the mixture until the egg whites are fully cooked and set, about 3-4 minutes.
Once cooked, sprinkle the crumbled feta cheese on top and allow it to warm through for another minute.
Remove from heat and garnish with fresh herbs.
