1 lb (450g) baby carrots, peeled

2 tablespoons honey

1 tablespoon Dijon mustard

2 tablespoons unsalted butter

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

In a medium saucepan, combine the honey, Dijon mustard, butter, and olive oil over medium heat. Stir until the butter is melted and the mixture is well combined, about 2-3 minutes.

    Add the peeled baby carrots to the saucepan and season with salt and pepper. Toss to coat the carrots evenly in the honey mustard mixture.

      Cover the saucepan and reduce the heat to low. Cook for approximately 15 minutes, stirring occasionally, until the carrots are tender but still crisp.

        Increase the heat to medium-high and uncover the saucepan. Cook for an additional 5-7 minutes, allowing the glaze to thicken and caramelize slightly, stirring frequently.

          Once the carrots are beautifully glazed and tender, remove from heat.

            Transfer the glazed carrots to a serving dish, and sprinkle with freshly chopped parsley for a pop of color and freshness.
