Instructions
Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
In a microwave-safe bowl, combine the white chocolate chips and sweetened condensed milk. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.
Stir in the vanilla extract and sea salt, mixing well to incorporate.
If you'd like a hint of green color, add a few drops of green food coloring and mix until evenly tinted.
Fold in the chopped pistachios until they are well dispersed throughout the mixture.
Pour the mixture into the prepared baking dish, using a spatula to spread it evenly. Press down gently to smooth out the top.
Sprinkle the reserved pistachios on top as a decorative touch.
Refrigerate for at least 3 hours or until set.
Once firm, lift the fudge out of the dish using the parchment overhang and cut into squares.
Notes
Serve the fudge squares on a decorative platter, garnished with additional whole pistachios and drizzled with melted white chocolate for an extra touch of elegance.
