Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with olive oil.
In a mixing bowl, combine the grated Parmesan cheese, shredded mozzarella cheese, flour, garlic powder, oregano, and black pepper. Mix thoroughly until all dry ingredients are well blended.
In a separate bowl, beat the egg and then add it to the cheese mixture. Stir until a dough forms. If it's too crumbly, you can add a tablespoon of water.
Add the chopped parsley to the mixture and fold it in gently.
Using your hands, form small bite-sized balls (about 1 inch in diameter) from the dough and place them onto the prepared baking sheet, leaving space between each bite.
Bake in the preheated oven for 12-15 minutes or until the bites are golden and crispy on the outside.
Remove from the oven and let them cool for a few minutes before serving.
