In a large mixing bowl, combine the rolled oats, pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract.
Sprinkle in the pumpkin pie spice and salt, then mix everything together until well combined. The mixture should be moist but firm enough to hold its shape.
If desired, fold in the mini chocolate chips and chopped nuts for extra texture and flavor.
Once all ingredients are well mixed, use your hands to form small balls, about 1 inch in diameter. Place each ball on a parchment-lined baking sheet.
Once all the mixture is rolled into bites, refrigerate the energy bites for at least 30 minutes to help them firm up.
After chilling, transfer the energy bites to an airtight container and store them in the refrigerator for up to 1 week.
