Ingredients

2 ½ cups all-purpose flour

1 ½ cups granulated sugar

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cocoa powder

1 cup vegetable oil

1 cup buttermilk, at room temperature

2 large eggs, at room temperature

2 tablespoons red food coloring

1 teaspoon vanilla extract

1 teaspoon white vinegar

Cream cheese frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 tablespoon vanilla extract

1 tablespoon milk (optional, for consistency)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder until well combined.

Combine Wet Ingredients: In another bowl, mix the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar until smooth.

Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be sure not to over mix; a few lumps are okay.

Bake the Cakes: Divide the batter evenly between the two prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Prepare the Cream Cheese Frosting: In a large mixing bowl, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar, mixing until fully incorporated. Stir in the vanilla extract and milk if needed for desired consistency.

Frost the Cakes: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the cake.

Decorate: For a decorative touch, pipe extra frosting around the edges and top with fresh berries or edible flowers.

                  Prep Time: 30 min | Total Time: 1 hour 15 min | Servings: 12

                    - Presentation Tips: Serve the cake sliced, showcasing the vibrant red color inside. Garnish with fresh mint leaves or a sprinkle of cocoa powder for an elegant finish.
