1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon garlic powder

6 large eggs

1 cup whole milk

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup bell pepper, diced

1/2 teaspoon dried thyme

1/2 teaspoon smoked paprika

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the thawed hash browns, grated Parmesan cheese, olive oil, garlic powder, salt, and pepper. Mix well until the hash browns are evenly coated.

      Press the hash brown mixture into the bottom and up the sides of a greased 9-inch pie dish, forming a crust. Make sure it’s compact and even.

        Pre-bake the hash brown crust in the preheated oven for 20-25 minutes, or until golden brown and crispy. Remove from the oven and set aside to cool slightly.

          In a separate bowl, whisk together the eggs and whole milk until well combined. Season with salt, pepper, thyme, and smoked paprika.

            Stir in the chopped spinach, halved cherry tomatoes, and diced bell pepper into the egg mixture, ensuring everything is evenly distributed.

              Pour the egg and vegetable mixture over the pre-baked hash brown crust.
