Instructions
Preheat your oven to 350°F (175°C). Prepare a muffin tin by spraying it with cooking spray or lining it with silicone muffin liners.
In a medium bowl, whisk together the eggs, cottage cheese, salt, and pepper until well combined and slightly frothy.
Stir in the shredded cheddar cheese, diced bell pepper, chopped spinach, cooked turkey sausage, and chives until evenly mixed.
Pour the egg mixture into each muffin cup, filling them about ¾ full to allow for rising.
Place the muffin tin in the oven and bake for 20-25 minutes, or until the egg bites are set and just slightly springy to the touch.
Once baked, remove the muffin tin from the oven and let it cool for a few minutes. Gently run a knife around the edges to help release the egg bites.
Serve warm, or allow to cool completely before storing in an airtight container in the refrigerator for up to 5 days.
