Boil a pot of water and cook the egg noodles according to package instructions. Drain and set aside, tossing with a drizzle of sesame oil to prevent sticking.
In a small bowl, mix together the soy sauce, honey, minced garlic, and grated ginger. Set aside as this will form the sticky sauce for the noodles.
In a large pan or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and season with salt and black pepper. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through.
Reduce the heat to medium, and add the sliced red bell pepper to the pan. Stir-fry for about 3 minutes until slightly softened.
Add the cooked noodles to the pan along with the sticky garlic sauce. Toss everything together until the noodles are well coated and heated through.
Sprinkle sesame seeds and chopped green onions on top and give it one last gentle stir to combine.
Plate the sticky garlic chicken noodles and garnish with extra green onions if desired.

Serve in deep bowls with an extra sprinkle of sesame seeds on top and a slice of lime on the side for an added zing!
