In a large bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, cayenne pepper, salt, and pepper until evenly coated.
Set your air fryer to 400°F (200°C) and preheat for about 5 minutes.
Place the seasoned sweet potato fries in the air fryer basket in a single layer; you may need to do this in batches. Air fry for 15-20 minutes, shaking the basket halfway through, until the fries are crispy and golden brown.
While the fries are cooking, in a bowl, combine mayonnaise, lemon juice, Dijon mustard, minced garlic, sriracha, and a pinch of salt. Mix well until smooth.
Once fries are cooked, remove from the air fryer and serve immediately with the spicy aioli on the side for dipping.
Notes
Arrange the fries in a rustic basket or on a wooden board, with a small bowl of spicy aioli in the center. Garnish with chopped parsley for a pop of color.
