In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat if necessary.
Add the black beans, diced tomatoes (with juices), taco seasoning, corn, salt, and pepper to the skillet. Stir to combine and cook for another 5 minutes until heated through.
In a baking dish, layer half of the crushed tortilla chips at the bottom.
Spread the meat and bean mixture evenly over the tortilla chips.
Dollop the sour cream on top of the mixture.
Sprinkle half of the shredded cheese over the sour cream layer.
Add a second layer with the remaining tortilla chips, then top with the rest of the meat mixture.
Top off with the remaining shredded cheese and chopped green onions.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Once done, remove from the oven and let it sit for 5 minutes before serving.
Garnish with fresh cilantro if desired.
