2 chicken breasts, diced

1 cup jasmine rice

2 cups water or chicken broth

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon fresh ginger, grated

2 cloves garlic, minced

1 cup broccoli florets

1 carrot, julienned

1 bell pepper, sliced

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cook the Rice: In a medium saucepan, combine jasmine rice and water (or chicken broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is fluffy and the liquid is absorbed. Remove from heat and set aside.
