Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.
In a large mixing bowl, combine the rolled oats, natural peanut butter, and honey (or maple syrup). Mix until all ingredients are well incorporated and a sticky mixture forms.
Transfer the mixture into the prepared baking dish and spread it evenly using a spatula, pressing down firmly to create a compact layer.
Bake in the preheated oven for about 15-20 minutes or until the edges turn golden brown.
Remove from the oven and let it cool in the pan for about 10 minutes before using the parchment overhang to lift it out. Allow to cool completely on a wire rack.
Once cooled, cut the mixture into bars of your desired size.
