Instructions
Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.
In a large mixing bowl, combine the almond butter and maple syrup. Stir in the vanilla extract until the mixture is smooth and well combined.
In a separate bowl, whisk together the oat flour, cocoa powder, baking soda, and salt until evenly blended.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. The batter should be thick and fudgy. If desired, fold in the vegan chocolate chips and chopped nuts.
Pour the batter into the prepared baking pan and spread it out evenly using a spatula.
Press the colorful sprinkles gently onto the top of the brownie batter.
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out mostly clean (a few moist crumbs are okay).
Allow the brownies to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack. Once cooled, slice into squares.
